Tuna & Quinoa Pie




1/2 cup cooked quinoa

1 large can of tuna in brine

1/2 cup grated tasty cheese

1 onion chopped

A bunch of chopped spinach and kale

1/2 cup light cream

5 eggs

1 tablespoon feta

6 baby tomatoes sliced

1 tablespoon parmesan



Cook quinoa according to packet directions.  Allow to cool.  Add onion, spinach and kale to a pan and cook until soft.  Add eggs, quinoa, cheese, tuna, cream and onion mix to a bowl.  Mix together with a fork.  Season well.  Add to a quiche dish.  Top with sliced tomatoes, feta, parmesan and extra tasty cheese.  Bake at 180 degrees for 30 minutes.
