Cranberry, coconut and date slice



1 cup self raising flour

1 cup coconut

1/2 cup cranberries

1/2 cup pepitas

1/2 cup sunflower seeds

1/2 cup chopped dates

1/2 cup light milk

1 egg

1/4 cup 100% maple syrup

1/2 cup melted coconut oil



Add flour, coconut, cranberries, seeds and dates to a mixing bowl.  Add milk, maple syrup and egg to a jug and mix with a fork.  Melt coconut oil in the microwave.  Make a well in the centre of dry ingredients.  Add milk mix and coconut oil to bowl and mix together.  Add mixture to a loaf tin lined with baking paper and bake at 180 degrees for 30 minutes.  Allow to cool in tray before taking out of tray and cooling on a wire rack.  Cut into slices.
