Baked potatoes with yummy toppings


1 potato

1 sweet potato

1/2 cup four bean mix

Bunch of kale

Bunch of spinach

1 clove of garlic

1/2 cup grated tasty cheese

1 tablespoon sour cream


Wash potatoes and pierce with a fork a couple of times.  Bake potatoes in a hot oven around 200 degrees for about 1 hour or until soft inside.  Meanwhile cook bacon until well done.  Add to a bowl.  Cut up kale and spinach and add to pan along with garlic and a little olive oil.  Cook until soft.  Once potatoes are cooked cut them open and add bacon, beans, kale & spinach mix and cheese.  (Optional: microwave until cheese melts, around 40 seconds)  Add sour cream and season.

NOTE: This is a great camping recipe.
