Brown rice crust quiche

Crust ingredients

1 cup brown rice

1 egg

1/4 cup parmesan cheese

Himalayan rock salt

 

Crust instructions

Cook rice.  Add to bowl with egg, parmesan and salt.  Mix.  Add to a quiche dish and spread bottom of dish.  Bake for 10 minutes.

 

Filling ingredients

5 bacon rashes chopped

1 onion chopped

4 mushrooms chopped

1 red capsicum chopped

Handful of spinach leaves

 

Filling instructions

Chop vegetables and bacon and add to pan.  Cook until bacon is well done and vegetables are soft.

 

Egg mix ingredients

5 eggs

1/2 cup milk

1/4 cup parmesan cheese

1 tablespoon feta

 

Egg mix instructions

Add all ingredients to a jug and mix.  Season well.

Add filling first on top of rice.  Then add egg mix.  Sprinkle with feta.  Bake at 180 degrees around 30 minutes or until cooked.

Serve with a side salad and home baked chips or vegetables.
