Chicken and roast vegetable quinoa pie



1 sweet potato peeled and diced

1 zucchini diced

1 capsicum diced

1 chicken breast diced

1/2 cup quinoa

1 teaspoon paprika

Handful of spinach

Handful of kale

1 clove garlic

1 teaspoon olive oil

4 eggs

1/2 cup light milk

1/2 cup Parmesan cheese

1/2 cup tasty cheese grated



Cut the sweet potato, zucchini and capsicum and put on a baking tray with olive oil. Bake until cooked around 1 hour. Meanwhile cook quinoa according to packet instructions. Cut up chicken and add to a pan, along with paprika. Cook until chicken is well done.

Add spinach, kale, garlic and olive oil to a blender and blend until finely diced. Add eggs, milk, Parmesan and spinach mix to a jug. Mix well with a fork.

Add roast vegetables, cooked quinoa, chicken and egg mix to a bowl. Mix together and season well. Add mixture to a quiche dish and top with grated cheese. Bake around 30 minutes until cooked.
