Vegetable breakfast fritters & potato rosti’s



Fritter Ingredients

1 carrot peeled and finely grated

1 zucchini peeled and finely grated

2 mushrooms chopped finely

1 bunch spinach chopped finely

1/4 cup plain flour

3 eggs

1 tablespoon feta

1 tablespoon parmesan

 

Fritter Instructions

Add all ingredients to a bowl and season well.  Mix together with a fork.  Add dollops of mixture to a pan.  Cook until brown and cooked through.

 

Rosti ingredients

1/2 large sweet potato peeled and finely grated

3 potato’s peeled and finely grated

1 egg

 

Rosti Instructions

Grate the potatoes.  Squeeze out the excess moister of potatoes with paper towels.  Add to a bowl with an egg.  Season well and mix.  Add to pan in small dollops and cook for around 20 minutes, until brown and cooked through.

Serve with eggs, bacon, tomato and extra vegetables.
