Coconut cacao cupcakes

 

Ingredients 

1 1/2 cups self raising flour

1/4 cup cacao

1/4 cup brown sugar

1/2 cup coconut

1 cup light milk

1/2 cup coconut oil

2 eggs

1/4 cup 100% maple syrup

 

Instructions

Sift flour, cacao and brown sugar into a mixer bowl. Add coconut.  Melt coconut oil in microwave.  Add oil, eggs, milk and maple syrup to mixer bowl.  Mix on a high speed for 2 minutes.  Add mixture to cupcake tin.  Bake in a 180 degree oven for around 20 minutes, until cooked through.  Allow to cool on a cooling rack.

 

Icing 

1/2 cup coconut

1 tablespoon cacao

2 tablespoons 100% maple syrup

4 tablespoons light milk

1 tablespoon soft unsalted butter

 

Instructions

Add all ingredients to a bowl and mix together.  Add to top of cooled cakes.  Sprinkle with extra coconut.
