Tuna, quinoa and sweet potato bites


1/2 cup quinoa

1/2 cup grated cheese

1/2 sweet potato peeled, cooked and mashed

185g can tuna in brine

1 egg

1/4 cup breadcrumbs


Cook quinoa according to packet directions. Meanwhile peel and chop sweet potato. Add potato to boiling water and cook until soft. Once quinoa is cooked add to a bowl and allow to cool. Once potato is soft mash with a potato masher. Add potato to quinoa along with tuna, cheese, egg and breadcrumbs. Season and roll into balls. Cook on a frypan on medium heat with olive oil until brown. Serve with toothpicks and tomato sauce.
