Apple & blueberry pancakes


1 apple peeled and diced

1/2 cup frozen blueberries

Sprinkle cinnamon

Sprinkle lemon juice

1 cup self raising flour

1 egg

1 cup light milk



Cut apple and put into a saucepan along with blueberries, cinnamon and lemon juice. Allow to cook over low heat until apples are soft. Add flour, egg and milk together in a bowl. Whisk together. Add berry mix to pancake batter and mix. Cook pancakes on frypan until golden and cooked through. Serve with fresh fruit and maple syrup.
