Apricot oat slice


1 cup quick oats

1/2 cup coconut

1 cup self raising flour

1 cup dried apricots chopped

50g unsalted butter melted

1 egg

1/2 cup 100% maple syrup



Add oats, coconut, flour and apricots to a bowl. Melt butter in microwave. Add maple syrup to butter along with egg. Stir with a fork. Add wet ingredients to dry ingredients and mix. Line a baking tin and press mixture into tin with your hands. Bake at 180 degrees for around 20 minutes until golden and cooked through. Allow to cool before taking out of tin and cutting into slices.
