Spinach and kale ricotta pie



1 onion chopped

4 bacon rashers chopped

1 clove garlic crushed

1 bunch of kale chopped

1 bunch of spinach chopped

1 tub light ricotta

4 large eggs

1/4 cup Parmesan cheese

1 sheet puff pastry



Allow pastry to thaw and line into a baking dish topped with baking paper and pastry weights.  Blind bake for 10 minutes at 180 degrees.  Chop onion and bacon.  Sauté until onion is soft.  Add crushed garlic and stir through.  Chop kale and spinach and add to pan.  Sauté until soft.  Add bacon mix to a mixing bowl along with ricotta, eggs and parmesan cheese.  Stir and season well.  Add ricotta mix to the pastry case.  Bake in a 180 degree oven for around 30 minutes.
