Beef & lentil patties with roast capsicum quinoa

Ingredients Beef patties

1 sweet potato peeled and chopped

1 potato peeled and chopped

500g mince beef

1 can brown lentils

1 carrot peeled and grated

1 zucchini peeled and grated

1/4 cup parmesan cheese

1 tablespoon tomato paste

1 teaspoon mixed herbs

3/4 cup breadcrumbs

1 can tomato soup

 

Ingredients quinoa

 

1 cup tri-colour quinoa

1 red capsicum

Bunch of spinach

1 tablespoon Greek feta

 

Instructions beef patties

Peel and cut potatoes. Bring cold water to a boil. Boil potatoes until soft. Drain and mash with a potato masher. Allow to cool. Once cooled add all ingredients, except tomato soup, to a mixing bowl and season.  Form into patties with your hands and fry until golden and cooked. Add patties to a baking dish. Add tomato soup on top of patties and cover. Bake in a moderate oven around 20-30 minutes.

 

Instructions quinoa

Cut capsicum and lay onto baking dish. Top with olive oil and bake around 30 minutes. Cook quinoa according to packet directions. Add capsicum and chopped spinach to quinoa once cooked.

 

Put it all together

Serve by adding quinoa and then beef pattie on top. Sprinkle with feta.
