Moroccan chicken frittatas



1 chicken breast

1/2 sweet potato

1 teaspoon Moroccan seasoning

Handful spinach

2 eggs

1/4 cup light cream

1 tablespoon Parmesan

1 tomato

1 tablespoon feta



Cut sweet potato into cubes. Put onto a baking tray and spray with oil spray. Bake until cooked around 40 minutes. Cut up chicken into cubes and fry on fry pan. Sprinkle with Moroccan seasoning. Fry until cooked. Put aside. Add spinach to fry pan cook until soft. Add egg, Parmesan and cream to a jug. Season and mix with a fork.

Put together

Add sweet potato, chicken and then egg mix to frittata cases. Top with spinach, slice of tomato, feta and a little more Parmesan. Cook in a moderate oven for around 30 minutes.
